Cílem této bakalářské práce je popsat chřest lékařský (Asparagus officinalis). Chřest je málo využívanou, ale přesto chutnou, zdravou a nutričně bohatou zeleninou. V práci jsou dále uvedeny způsoby pěstování běleného a zeleného chřestu, historie pěstování chřestu v České republice a ve světě, porovnávání spotřeby chřestu v České Republice a v sousedních zemích. Dále jsou zde informace o nutričním složení chřestu, antioxidační aktivitě a některých vybraných nutričních látkách. |

The aim of this bachelor thesis is to describe sparrowgrass (Asparagus officinalis). The asparagus is not used very often but after all it is delicious, healthy and nutritionally rich vegetable. There are mentioned ways of growing bleached and green sparrowgrass, history of sparrowgrass growing in the Czech Republic and all over the world and com-parison of consumption of asparagus in the Czech Republic and in neighbouring countries in the thesis. There is also information about nutritional composition of asparagus, antioxi-dant activity and about some selected nutritional substances of the sparrowgrass. |
